Ingredients for 2 servings:
- 1 small onion(s)
- 2 bell peppers, red and yellow
- some oil
- 250 ml vegetable stock
- 1 cup cream or sour cream
- 250 g smoked tofu
- 1 small can of peas and carrots
- salt and pepper
- Herbs, fresh as desired
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Dice the onion and bell peppers. Sauté both in a little oil in a pan, then deglaze with vegetable stock. Simmer for about 10 minutes. Then add the cream and diced tofu and simmer until the peppers are soft and the sauce has thickened slightly. Just before the end, add the peas and carrots. Season with salt and pepper, sprinkle with chopped herbs, if desired, and serve with rice.
