Anton's Halloumi Pasta

Ingredients for 3 servings:

  • 1 package of cheese (halloumi)
  • 1 can of tomatoes, quartered
  • 1 tsp tomato paste
  • 2 garlic cloves
  • olive oil
  • 2 handfuls of black olives, more or less to taste
  • 1 tbsp oregano, fresh
  • 1 tbsp thyme, fresh
  • 2 chili peppers, dried or fresh
  • Sea salt
  • pepper
  • 1 dashes lemon juice
  • 300g pasta
  • 1 red bell pepper(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cut the halloumi into bite-sized pieces. Heat olive oil in a pan, add a crushed garlic clove and both chopped chilies. Continue heating the oil briefly before the garlic changes color. Now add the halloumi. When golden brown on both sides, add the chopped bell pepper. Cook for 1-2 minutes over medium heat, add the tomato paste, and a splash of the pasta water if desired. Season with the remaining spices and add the olives. Meanwhile, cook the pasta until al dente, drain, and toss in the sauce for 2 minutes.
