Ingredients for 2 servings:

  • 100 g glass noodles
  • 70 g lentils, red, peeled, halved
  • 1 spring onion(s)
  • 2 tbsp soy sauce, dark
  • ½ tsp red curry paste
  • 150 ml vegetable stock
  • n. B. sugar
  • oil
  • Salt

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the lentils in salted water for 10 minutes. Meanwhile, soak the glass noodles in hot water in another pot for about 10 minutes. Finely slice the spring onions. Heat a little oil in a pan and sauté the onions with the curry paste. Then add the drained noodles and lentils to the pan, pour in the vegetable stock. Season with soy sauce and sugar. Mix everything well and cook until no stock remains. It’s best to break up the noodles a bit in the pan. Variation: Instead of the lentils, you can also marinate tofu in soy sauce, mash it with a fork, and fry it like minced meat.
