Apple – Almond – Mascarpone Gratin

Ingredients for 4 servings:

  • 4 apples
  • 50 ml Amaretto
  • 3 eggs, separated
  • 150 g sugar
  • 500 g mascarpone
  • 2 tsp cinnamon
  • 100 g almond(s), sticks

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and core the apples, and cut them into thin wedges or cubes. Place them in a large soup plate or bowl and pour over the Amaretto. Let them stand. Meanwhile, beat the egg yolks with the sugar until thick and creamy. Stir in the mascarpone and cinnamon. Toast the almond slivers in a dry pan. Beat the egg whites until stiff peaks form. Fold the almonds and egg whites into the mascarpone along with the apples and the remaining soaking liquid. Transfer to a baking dish and bake at 200°C for 30-40 minutes. Enjoy while still hot or warm. Particularly delicious as a warm meal during Advent—but also delicious all year round.
