Apple and bacon bruschetta on crispbread

Ingredients for 4 servings:

  • 2 m.-sized apples (preferably Boskoop)
  • 1 large onion(s)
  • 100 g lean smoked bacon
  • 2 tbsp olive oil
  • 30 g butter
  • Thyme
  • salt and pepper
  • 8 slices of crispbread

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 26 minutes

Preheat oven to about 80 degrees Celsius. Cut the apples, bacon, and onion into small cubes (approx. 5 x 5 mm). Heat olive oil in a pan and fry the bacon cubes until the fat in the bacon has turned translucent. Remove the bacon from the pan and set aside on a plate. Place the 8 slices of crispbread on the oven rack; they should be thoroughly heated but not toasted! Add the butter to the pan and lightly fry the onion, then add the apple cubes and then add the bacon back in. Fry everything over low heat and season with salt, pepper, and thyme. Remove the crispbread slices from the oven and top each slice with the warm mixture. Serve warm. Perfect as a small snack or as a starter!
