Apple and carrot raw vegetables with kohlrabi and sunflower sprouts

Ingredients for 4 servings:

  • 400 g carrot(s)
  • 1 medium-sized kohlrabi (approx. 340g)
  • 2 medium-sized apples (approx. 400g)
  • ½ bunch of spring onions
  • 6 tbsp sprouts (sunflower sprouts)
  • 200 g natural yogurt or soy yogurt, natural (for the vegan version)
  • 2 tbsp lemon juice
  • 1 tbsp sunflower oil
  • 1 tsp agave syrup or rice syrup
  • e.g. sea salt
  • n. B. Salt and pepper, white, freshly ground

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Fresh salad with yogurt dressing, also available vegan

Mix all the dressing ingredients together in a large salad bowl. Trim the carrots and remove any green ends. Wash and core the apples. Wash the spring onions and slice them into fine rings. Peel the kohlrabi. Place the sunflower sprouts in a sieve and wash thoroughly. Finely grate the carrots and apples with the skin on. This works particularly well if you are using organic carrots and apples and the carrots have thin skins. If not, you can of course peel the carrots and apples. Finely grate the kohlrabi as well. Add the grated fruit and vegetables to the dressing and mix everything well. Finally, fold in the spring onions and sunflower sprouts and season the salad again to taste if desired. Cover and let it marinate in the refrigerator for at least one hour before serving. This amount is enough as a side dish for about 4 servings. If you want to eat the salad as a main course, this amount is enough for 2 servings. Note: Sunflower sprouts are easily grown from peeled and unroasted sunflower seeds. Soak the sunflower seeds in plenty of water for 12 hours. Then drain the water and rinse the seeds thoroughly with water. The germination period is 2 days, and the sprouts must be rinsed twice a day. However, you shouldn’t let the sunflower seeds germinate for longer, as otherwise they will become bitter. Special sprouting jars or germination devices are suitable for sprouting. Sprouting jars can be purchased inexpensively at certain drugstores. You can also make a sprouting jar out of a large screw-top jar. To do this, poke a few holes in the screw lid with a can opener for canned milk and place the jar tilted down to germinate. Sunflower seeds are very high in fat (approx. 40%), two-thirds of which is high-quality unsaturated fatty acids. Sunflower seeds are also very rich in protein (approx. 30%) and minerals. They contain particularly high levels of iron, phosphorus, and magnesium, as well as copper, manganese, potassium, calcium, zinc, iodine, and cobalt. Among the vitamins, vitamin E is particularly important. Sunflower seeds also contain B vitamins, as well as vitamins A, D, and K. Germination increases the vitamin content of the seeds, making the other nutrients more easily absorbed by the human body. Sunflower sprouts have a very fresh and nutty flavor.
