Ingredients for 4 servings:

  • 250 g strawberries
  • 1 medium-sized apple (approx. 190g)
  • 1 medium-sized banana(s), ripe (approx. 100g net)
  • 8 tbsp sprouts (sunflower sprouts)
  • 200 g soy yogurt (yogurt alternative), natural
  • 8 tbsp orange juice, freshly squeezed if possible

Mix all the ingredients for the dressing together in a large salad bowl. Place the sunflower sprouts in a sieve, rinse thoroughly with plenty of water, and drain well. Wash the strawberries, remove the green parts, and cut into bite-sized pieces. Wash the apple, core it, and dice it with the skin on. Peel and slice the banana. Add the fruit to the dressing and fold in. Finally, add the sunflower sprouts and mix everything well. This amount makes about 4 servings for a dessert. As a fruity snack, this amount makes about 2 servings. Note: Sunflower sprouts are easy to grow from peeled and unroasted sunflower seeds. To do this, soak the sunflower seeds in plenty of water for 12 hours. Then drain the water and rinse the seeds thoroughly with water. The germination time is 2 days, and the sprouts must be rinsed twice a day. However, the sunflower seeds should not be allowed to germinate for longer than this, as they will otherwise become bitter. Special sprouting jars or devices are suitable for sprouting. Sprouting jars can be purchased inexpensively at certain drugstores. You can also make a sprouting jar out of a large screw-top jar. To do this, pierce a few holes in the screw lid with a can opener for canned milk and place the jar with the lid facing down to sprout. Sunflower seeds are very high in fat (approx. 40%), two-thirds of which is high-quality unsaturated fatty acids. Sunflower seeds are also very rich in protein (approx. 30%) and minerals. They contain particularly high levels of iron, phosphorus, and magnesium, as well as copper, manganese, potassium, calcium, zinc, iodine, and cobalt. Vitamin E is particularly important among the vitamins. Sunflower seeds also contain B vitamins, as well as vitamins A, D, and K. Sprouting increases the vitamin content of the seeds, and the other nutrients become more easily absorbed by the human body. Sunflower sprouts have a very fresh and nutty flavor.
