Apple and curd cake

Ingredients for 1 servings:

  • 250 g flour
  • ½ pack of baking powder
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 200 ml milk
  • 125 g margarine or butter
  • 3 eggs
  • 500 g quark
  • 150 ml oil
  • 200 g sugar
  • 1 pack of pudding powder, vanilla
  • ½ liter of milk
  • 1 dashes lemon juice
  • 500 g apples

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 25 minutes

Sheet cake, for 12 pieces

Sift the flour and baking powder into a bowl. Add the sugar, vanilla sugar, eggs, milk, and margarine and mix everything into a dough. Grease a deep baking tray (all sides must be the same height) or line it with baking paper. Spread the dough on the tray. Preheat the oven to 200°C (top/bottom heat), 180°C (fan oven), gas mark 3. Separate the eggs. Mix the egg yolks with the quark and oil. Add the sugar, custard powder, milk, and lemon juice and mix well. Peel and quarter the apples, and remove the cores. Cut into small pieces and add to the quark mixture. Beat the egg whites until stiff and fold into the mixture. It will remain quite runny—hence the deep baking tray. Spread the apple and quark mixture over the dough. Place the cake in the oven and bake for a total of 45 minutes. After 25 minutes, cover with parchment paper or baking paper and bake for another 20 minutes.
