Apple and horseradish soup

Ingredients for 4 servings:

  • 500 g apples, peeled and finely diced
  • 150 g onion(s), finely chopped
  • 1 large potato(s), diced
  • 1 lemon(s)
  • 1 tbsp butter
  • 2 tsp sugar
  • ¼ liter white wine
  • 1 liter beef broth or vegetable broth
  • 2 tbsp horseradish, freshly grated or from the jar
  • salt and pepper
  • Parsley, chopped
  • possibly beef, some thin slices
  • possibly apple, some thinly sliced

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Marinate the apple cubes with the lemon juice. Sauté the onions and apple cubes with the sugar in butter, add the potatoes, and deglaze with the white wine. Simmer for 5 minutes. Then pour in the broth and simmer for 20 minutes. Finally, stir in the horseradish and season with salt and pepper. Garnish the soup with the beef slices and apple slices, sprinkle with chopped parsley, and serve hot.
