Apple and Marzipan Cake

Ingredients
 

  • 350 g Apples, peeled, pitted and diced
  • 0,5 Pc. Lemon
  • 175 g Butter or margarine
  • 150 g Sugar
  • 1 packet Vanilla sugar
  • 3 Pc. Eggs
  • 1 pinch Salt
  • 3 drops Bitter almond oil
  • 100 g Marzipan, grated
  • 200 g Flour
  • 50 g Food starch
  • 3 tsp Baking powder
  • Icing sugar for dusting

Instructions
 

  • It is best to put the marzipan in the freezer for about 30 minutes before use so that it can be grated easily. Drizzle the diced apples with lemon juice to prevent them from turning brown.
  • For the dough, stir the butter, sugar, vanilla sugar with the whisk of the hand mixer on the highest setting for a few minutes until frothy. Stir in the eggs one by one. Also stir in the salt, bitter almond oil and grated marzipan.
  • Mix the flour, cornstarch and baking powder and stir briefly on a low level. Finally fold in the apple cubes. Pour the dough into a loaf pan that has been greased and dusted with flour and smooth it out. Bake in a preheated oven at 150 degrees Celsius for approx. 60 - 65 minutes until golden yellow. If the dough gets too dark towards the end of the baking time, cover with aluminum foil.
  • Then let the cake cool in the mold, then remove it from the mold, let it cool down and dust with powdered sugar before serving.
