Apple and Mascarpone Gratin

Ingredients for 4 servings:

  • 4 apples
  • 75 ml Amaretto (alternatively maple syrup)
  • 3 eggs
  • 100 g honey
  • 250 g mascarpone
  • 250 g low-fat curd cheese
  • 1 tsp cinnamon

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel, core, and dice the apples. Mix with amaretto or maple syrup. Separate the eggs. Combine the egg yolks with honey, mascarpone, quark, and cinnamon, and stir in the apples. Beat the egg whites until stiff peaks form and fold the beaten egg whites into the quark mixture. Pour the mixture into a greased baking dish and bake in a preheated oven at 200°C for 30-40 minutes, until the top is lightly browned. Serves 4 as a main course or 8-10 as a dessert. Any leftovers taste great cold, too.
