Apple and millet casserole

Ingredients for 4 servings:

  • 100 g millet
  • 1 tsp cinnamon
  • 100 ml milk
  • 100 ml water
  • 4 eggs, separated
  • 4 tbsp honey
  • 50 g hazelnuts, ground
  • 1 lemon(s), juice and grated zest
  • 400 g apples, sour
  • 10 g butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring the millet to a boil with the milk and water mixture, add the cinnamon, reduce the heat, and simmer for another 8 minutes. Turn off and let the millet swell for another 15 minutes. Let it cool briefly. Whisk the egg yolks with honey, nuts, lemon juice, and lemon zest until frothy. Core and grate the apples. Fold the egg and nut mixture into the millet along with the grated apples. Beat the egg whites until stiff peaks form and fold in. Transfer everything to a greased baking dish and bake at 175°C (350°F) for 25-30 minutes, until the surface is golden brown.
