Ingredients for 1 servings:
- 500 g bacon (Flomen = belly wall fat from pork)
- 250 g bacon, fattier
- 250 g apples
- 1 onion(s)
- 4 sprigs of marjoram
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes
Skin the greaves and cut into small cubes. Remove the rind from the bacon and cut into small cubes. Peel, core and dice the apples. Peel and dice the onion. Fry the greaves in a saucepan over low heat, stirring frequently. When a lot of fat has rendered, increase the heat and heat the fat, stirring constantly, until the cracklings are crispy and the fat runs clear. Add the bacon, onion and apples and cook over low heat for 5 minutes. Rinse the marjoram, pat dry, pick off the leaves and stir in. Remove the pan from the heat and let the fat cool slightly. Pour the lard into a heatproof container (preferably a stone pot) and let it cool completely, stirring frequently.
