Ingredients for 4 servings:

  • 10 apples, sour
  • 1 vanilla pod(s)
  • 40 g butter, salted
  • 150 g flour
  • 120 g butter, salted
  • 2 tbsp sugar
  • 1 vanilla pod(s)
  • 3 bulb(s)
  • 1 lemon(s)
  • 2 tbsp almond flakes
  • e.g. crème fraîche

winter delicacy with baked apple compote

First, make the baked apple compote: Wash the apples, core them, and place them in a gratin dish. Split the vanilla pod and cut them into 10 pieces. Place a piece of it and a little butter into each apple. Bake in the middle rack of a preheated oven (190°C) for 40 minutes. Remove from the oven and carefully remove the apple skins with a knife or spoon. Scrape out the vanilla pieces and mix them into the compote. For the crumble, put the flour and butter in a bowl and crumble with your fingers or a fork. Add the vanilla pod pulp and sugar and mix. Peel and thinly slice the pears and drizzle with lemon juice. Place the pear slices on top of the baked apple compote and scatter the crumb mixture over them. Finally, scatter the almond flakes on top. Bake in the oven (190°C) for 35 minutes. Then remove and let cool. It also tastes delicious lukewarm. Serve with crème fraîche.
