Baked apple with cinnamon sauce

Ingredients for 2 servings:

  • 2 apples, sour (e.g. Boskoop)
  • lemon juice
  • some fat, for the mold
  • 4 tbsp honey, liquid
  • 20 g butter
  • 250 ml whipped cream
  • 4 egg yolks
  • 3 tsp cinnamon, ground
  • possibly vanilla pod(s)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Halve the apples crosswise and remove the cores. Immediately rub the cut surfaces of the apples with lemon juice to prevent them from browning. Place the apples side by side in a greased baking dish, drizzle each with 1/2 tablespoon of honey, and top with knobs of butter. Bake on the middle rack of an oven preheated to 175°C (gas mark 2) for about 25 minutes. Meanwhile, whisk the cream with the remaining honey, egg yolks, and cinnamon until fluffy, stirring gently over low heat until the sauce thickens. Arrange the cooked baked apples on top. Tip: Replace the cinnamon with the scraped seeds of two vanilla pods.
