Apple and turkey roulade in curry sauce

Ingredients for 4 servings:

  • 4 large roulades (turkey)
  • 4 slices of ham (Serrano or Parma)
  • 1 large carrot(s)
  • 1 large apple
  • salt and pepper
  • 500 ml vegetable stock
  • 1 cup sour cream
  • 2 tbsp applesauce (alternatively peach jelly)
  • curry powder
  • cumin

Working time approx. 30 minutes; Total time approx. 30 minutes

tastes very delicious – even for those who don’t like fruit with meat

Pound the turkey meat flat and cut into 8 equal pieces. Season both sides with spices and line with ham. Peel the carrot and apple, then slice the carrot lengthwise using a mandoline until very thin strips are formed (they should be nice and flexible). Cut the apple into eighths. Arrange the carrot strips on top of the meat and wrap the apple pieces in them. Secure with toothpicks. Brown all over in a hot pan over high heat. Remove from the pan and keep warm. Boil the meat juices with vegetable broth. Add sour cream and applesauce and season to taste. Serve with any side dish you can imagine—but the roulades also go well with pumpkin and vegetables.
