Apple-banana muffins, low carb and vegan

Ingredients for 1 servings:

  • 3 banana(s), ripe
  • 1 apple
  • 150 ml oil
  • 100 g vanilla-flavored protein powder
  • 50 g coconut flour
  • 50 g flour (protein flour)
  • 50 g coconut blossom sugar or Xucker
  • 1 packet of baking powder
  • 1 pinch of salt
  • 1 shot of mineral water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

for 18 muffins

Using an immersion blender, puree the peeled bananas, oil, and sugar in a bowl. Then add the flour, baking powder, and salt and mix again. The batter will be quite stiff. I added a splash of mineral water to loosen the mixture a bit. Now dice the apple and fold it into the batter. Finally, fill the batter into the muffin cups and bake in a preheated oven at 150°C for about 20-25 minutes. When I serve them, I like to top the apple-banana muffins with a sprinkle of cinnamon. This recipe yields 18 muffins.
