Ingredients for 1 servings:
- 3 banana(s), ripe
- 1 apple
- 150 ml oil
- 200 g spelt flour
- 6 tbsp spelt flakes
- 50 g sugar
- 1 packet of baking powder
- 1 pinch of salt
- 1 shot of mineral water

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
for 18 muffins
Place the peeled bananas in a bowl with the oil and sugar and puree with a hand blender. Then add the flour, spelt flakes, baking powder, and salt and mix again. The batter will be quite firm. I added a splash of mineral water to loosen the mixture a bit. Now dice the apple and fold it into the batter. Finally, fill the batter into the muffin cups and bake in a preheated oven at 150°C for about 20-25 minutes. When I serve them, I like to top the apple-banana muffins with a little sugar and cinnamon. This recipe makes 18 muffins.
