Apple-Banana Oatmeal Cookies

Ingredients for 1 servings:

  • 100 g oat flakes
  • 10 g bran (wheat bran)
  • 30 g flour
  • 30 g brown sugar
  • 5 g baking powder
  • 1 tbsp soy flour
  • 1 tbsp cocoa powder
  • 1 tsp cinnamon powder
  • 50 g soy yogurt (yogurt alternative)
  • 1 apple
  • 2 bananas
  • e.g. apple juice or soy milk

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

vegan, low-calorie, egg-free, fat-free, makes about 45 cookies

Mix all the dry ingredients together. Then add the soy yogurt. Peel the apple and cut it into small pieces, and mash the bananas with a fork. Add both to the batter and mix well. If the consistency is too dry, add a little more soy yogurt, apple juice, or soy milk. With moistened hands, form small balls and flatten them on a baking sheet lined with baking paper. Bake the cookies at 180°C for about 15-20 minutes. If you want the cookies to be crispier, you can leave them in for longer, but turn off the oven. This recipe can be easily varied by adding chocolate chips or dried fruit (cranberries) to the batter. The cocoa powder and soy flour can also be omitted.
