Ingredients for 1 servings:
- 2 large apples, juicy
- 100 g almonds, chopped
- 1 pack of cream of tartar baking powder
- 60 g cranberries, possibly slightly chopped, or raisins
- 250 g spelt flour
- 2 tbsp cocoa powder
- 2 tbsp flaxseed meal
- 4 tbsp sugar
- 1 tsp cinnamon
- 1 tsp speculatius spice
- possibly apple juice or orange juice
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour
Peel and core the apples, and grate them coarsely. Sprinkle with sugar, cover with foil, and set aside. In a bowl, combine the spelt flour, almonds, baking powder, cranberries, cocoa powder, flaxseed meal, cinnamon, and speculaas spice. Add the grated apples, which have released their juices in the meantime. Mix everything well. If the batter is too dry, you can add a little apple or orange juice. Pour the batter into a loaf pan lined with baking paper and press down firmly. Bake at 160°C for approximately 40-45 minutes.
