vegetarian, vegan, for a 24 cm long loaf pan with a capacity of 1.8 litres
Peel the apples and remove the cores. Then grate the apples and banana. I always use a food processor for this, but a blender or similar would also work. If you don’t want to use a banana, you can substitute it with 1-2 apples. Mix the apple-banana mixture with cane sugar, cocoa, cranberries, or other dried fruit, and the nuts and almonds. I usually use hazelnuts, walnuts, almonds, or cashews, depending on your taste and preference or whatever you have in your pantry. You can also add a little rum (about 30 ml). Mix everything well and let it sit in the refrigerator overnight. The next day, simply add the flour and baking powder, knead thoroughly, and pour into a greased 24 cm loaf pan (1.8 liter capacity). Bake in a preheated oven at 180°C (fan oven) for about 60 minutes on the middle rack.
