Apple cake with nuts or almonds

Ingredients for 1 servings:

  • 190 g flour (type 480)
  • 10 g spelt flour
  • 100 g flour (type 405)
  • 1 pinch of salt
  • 1 ½ tsp baking powder
  • 135 g butter
  • 95 g sugar
  • 1 egg(s) (size L)
  • 550 g apples
  • 100 g nuts or almonds, ground
  • ½ packet of vanilla sugar
  • 3 tbsp sugar
  • 20 g butter
  • Grease for the tray
  • Flour for the baking sheet

Instructions

Working time approx. 1 hour; Rest time approx. 2 hours; Total time approx. 3 hours

Make a shortcrust pastry from the first 8 ingredients and refrigerate. Meanwhile, prepare the filling. To do this, coarsely grate the apples with a grater. Drain off any excess juice if necessary. Melt the butter and sauté the apples with the sugar and vanilla sugar for about 10-15 minutes (not too soft). Then add the nuts or almonds and refrigerate. Roll out the shortcrust pastry and first cut out various shapes, such as bunnies, butterflies, or stars. Place the remaining dough on a greased and floured baking sheet (20 x 30 cm), and raise the edges by about 1-1.5 cm. Spread the apple filling over the pastry and arrange the small figures on top. Bake at 180°C for 25-35 minutes.
