Apple cake with walnuts

Ingredients for 1 servings:

  • 1 packet of baking powder
  • 250 g flour
  • ½ tsp cinnamon
  • 2 eggs
  • 160 g sugar
  • 1 packet of vanilla sugar
  • n. B. Salt
  • 100 g yogurt
  • 1 pack of lemon peel flavoring
  • 100 ml oil
  • 100 g walnuts
  • 4 apples, sour
  • 1 tbsp butter
  • 1 tbsp apricot jam
  • Fat for the mold
  • Powdered sugar for sprinkling

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Mix the baking powder, flour, and cinnamon. Beat the eggs with the sugar and vanilla sugar, add the remaining ingredients, and beat for about five minutes. Then, toss the walnuts with a little flour to prevent them from sinking to the bottom of the pan during baking, and add them to the batter. Peel and quarter the apples, cut one apple into small pieces, and add the remaining apples to the batter. Grease a 22cm springform pan and fill it with the batter, then spread the apples on top. Melt a tablespoon of butter and brush it over the apples. If desired, scatter a few raisins on top. Bake the cake in the preheated oven at 170°C for about 45 minutes. Spread the apricot jam on the still-warm cake. Let the cake cool completely and sprinkle with powdered sugar.
