Core the apples, then slice them as thinly as possible. Five apples will serve two baking trays. Meanwhile, preheat the oven to 120°C (top/bottom heat). Place the apple slices individually on a baking tray, barely touching, and sprinkle with cinnamon. Place the trays in the oven, opening the oven door briefly every now and then to allow the moisture to escape, and turn them over after about 5 minutes. It’s okay if the apple slices curl; this is normal. The slices are ready when they feel leathery; depending on the thickness of the slices, they may take longer or shorter to dry.
