Apple-Cinnamon Cake

Ingredients for 8 servings:

  • 80 g butter or margarine
  • 80 g sugar
  • 150 g quark
  • 20 ml vegetable oil
  • 100 g spelt flour
  • 60 g almond flour
  • 2 eggs
  • 1 tsp, heaped baking powder
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 1 large apple e.g. Boskopp
  • 60 g butter
  • 80 g brown sugar
  • 2 tbsp cinnamon powder
  • 1 tbsp flour
  • 150 g cream cheese
  • 2 tbsp milk or water
  • 60 g powdered sugar
  • 1 organic lemon(s), grated peel

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 10 minutes

Preheat the oven to 180°C (top/bottom heat). Using a hand mixer, mix the softened butter or margarine with the sugar. Then add the quark and oil and mix. Now add the flour, almond flour, baking powder, salt, and vanilla sugar and mix everything until smooth and fluffy. Cut the washed apple into small cubes, stir into the batter, and pour everything into a greased springform pan. For the cinnamon mixture, melt the butter in a saucepan, then stir in the brown sugar, cinnamon, and flour. Spread this mixture spoonful by spoonful over the raw cake batter. Then, using a skewer or small spoon, mix the batter and cinnamon mixture together in a circular motion. Bake in the preheated oven for 45 minutes. For the topping, mix the cream cheese with milk or water, add the powdered sugar, and the zest of a washed lemon. Store in the refrigerator. Let the cake cool and decorate with the topping before serving.
