Ingredients for 1 servings:
- 300 g apples approx. 3 small or 2 large
- 200 g flour
- 150 g oat flakes
- 1 tsp cinnamon or 2 tsp if you want a strong cinnamon flavor
- ½ tsp baking soda
- 2 tsp cream of tartar baking powder
- 40 g walnuts, chopped or grated
- 50 ml oil (e.g. germ oil)
- 300 ml buttermilk
- 2 eggs, size S
- 1 tsp salt
- 100 g sugar
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes
Core the apples and cut into small pieces. Combine the flour, oats, cinnamon, baking soda, baking powder, walnuts, salt, and sugar in a mixing bowl and mix. In another bowl, combine the buttermilk with the oil and eggs (using a mixer or by hand). Then add the mixture to the bowl with the other dry ingredients and mix well. Add the apples and mix everything together. Fill the mixture into muffin cups. Bake in a preheated oven at approximately 180°C (350°F) for approximately 25 minutes. Cool on a wire rack, then enjoy. The more cinnamon you add, the darker the muffins will be. This recipe makes 17 muffins.
