Ingredients for 5 servings:

  • 250 g butter or margarine
  • 200 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 4 eggs
  • 400 g flour
  • 1 packet of baking powder
  • ½ tsp cinnamon
  • ½ lemon(s), the juice
  • 1 ½ kg apples
  • Powdered sugar, for dusting

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cream the room-temperature butter, sugar, vanilla sugar, and salt until fluffy. Gradually add the eggs. Combine the flour and baking powder, sift them over the batter, and mix. Add the cinnamon and lemon juice. Peel, quarter, and core the apples. Cut the apple quarters into small pieces and fold them into the batter. Using a tablespoon, place small heaps of batter onto a baking sheet lined with baking paper. (You will need 2-3 sheets, depending on the size of the biscuits.) Bake in a preheated oven (E 200°, Gas Mark 3) for approximately 15 to 20 minutes until golden brown. Dust with icing sugar. Makes approximately 20 pieces. They taste truly delicious and are also ideal for a child’s birthday party.
