à la Grandma Else
Knead the ingredients for the base into a smooth dough. Roll out the dough and place it in a springform pan. Tip: I roll out the dough, place the base of the springform pan on top, and cut a circle around it with a knife, which I then use as the base. I then shape the remaining dough into two equal-length “rolls,” which I then place on the base and press firmly against the edge of the springform pan. Then spread the apple compote over the dough in the springform pan and smooth it out. Mix the ingredients for the crumble topping and crumble it over the cake. Bake at 160°C (convection oven) for about 35-40 minutes. (Note: Increase the temperature if using top/bottom heat.) In our family, this cake is a tradition at all coffee gatherings around the fair, shooting festival, or May Day. I’m glad my Grandma Else shared this recipe with me.
