Apple fries with strawberry ketchup

Ingredients for 2 servings:

  • 2 apples, Boskoop
  • 50 g flour
  • 2 tbsp clarified butter
  • 100 g strawberries
  • 1 tbsp lemon juice
  • 1 tsp powdered sugar
  • 1 pinch of ginger powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Puree strawberries with lemon juice, powdered sugar, and ginger powder. Refrigerate. Quarter, peel, core, and slice the apples, then cut into finger-length sticks. Coat in flour and fry in hot oil until golden brown and crispy (turn carefully). Serve on two plates, drizzled with ketchup.
