Apple fritters with almonds

Ingredients for 4 servings:

  • 750 g apples, sour, firm variety
  • 50 g sugar
  • 1 lemon(s), organic, juice and zest
  • 2 cl rum
  • 200 g flour
  • 30 g ground almonds
  • 2 eggs
  • 125 ml apple juice
  • 125 ml white wine
  • 1 pinch of salt
  • 50 g almond flakes
  • some powdered sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 15 minutes

Peel the apples, core them, and cut them into 1 cm thick rings. Place the rings in a bowl, sprinkle with sugar, and drizzle with lemon juice and rum. Cover and let stand. Combine the flour, almonds, apple juice, eggs, white wine, salt, and grated lemon zest in a bowl and mix everything into a thick paste. Let stand for about 30 minutes. Dip the marinated apple rings in the batter and bake in a pan, swimming in hot fat, for about 2 minutes. Turn the cakes over and bake on the other side for another 2 minutes. Toast the flaked almonds in a second non-stick pan. Roll the apple cakes in the flaked almonds. Dust with powdered sugar and serve.
