Apple-Ginger Cake

Ingredients for 1 servings:

  • 70 g apple, dried
  • 50 g fresh ginger root
  • 100 g raw cane sugar
  • 120 g coconut oil, soft
  • 120 g spelt flour, type 630
  • 100 ml soy milk (soy drink), (vanilla)
  • 1 tsp, heaped baking powder

Instructions

Working time approx. 10 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Vegan

Finely chop the apples and peel, coarsely chop, or grate the ginger. Combine all ingredients in a bowl with a mixer. Spread the dough on baking paper and form into a log. Place the dough in the freezer for about 20 minutes. Preheat the oven to 140 degrees Celsius (284 degrees Fahrenheit). Cut the log into approximately 2 cm thick pieces and bake for 20 minutes. Tip: You can also pour the dough into muffin cups; then you don’t need to freeze it.
