Ingredients for 2 servings:

  • 150 g apples
  • 50 g sugar
  • 1 packet of vanilla sugar
  • 2 tbsp lemon juice
  • 2 cl liqueur (apple liqueur)
  • 170 ml milk
  • 30 ml cream
  • 1 egg yolk

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Peel the apples, cut into small pieces, and sauté in a saucepan with 25g of sugar, the vanilla sugar, and the lemon juice. When the apples are soft, add the liqueur, puree everything, and chill. Whisk the milk with the cream, egg yolk, and 25g of sugar, stirring continuously. Bring to a boil. Mix with the apple puree and refrigerate the cream for at least 1 hour. Pour the cooled cream into an ice cream maker and freeze. Tip: If you don’t have an ice cream maker, simply place it in the freezer and stir thoroughly every 15 minutes.
