Apple in Dressing Gown with Vanilla Sauce
The perfect apple in dressing gown with vanilla sauce recipe with a picture and simple step-by-step instructions.
Dough:
- 2 tbsp Freshly chopped pistachios
- 150 g Flour
- 100 g Soft butter
- 40 g Sugar
- 3 tbsp Water
Filling:
- 60 g Marzipan raw mass
- 1,5 tbsp Orange liqueur – alternatively orange juice
- 20 g Raisins
- 10 g Almond sticks
Custard:
- 4 Egg yolk
- 50 g Sugar
- 150 ml Milk
- 50 ml Cream
- 1 Vanilla pod (pulp only)
Dough:
- First knead all ingredients with the dough hook of the hand mixer until crumbly. Then place everything on a smooth surface and knead with your hands to form a smooth dough. Wrap in foil and refrigerate for 30 minutes.
Filling:
- In the meantime, mix the raw marzipan mixture with the liqueur or juice (if children are also eating). When it has become a soft mass, add the raisins and almond sticks and mix everything well. Provide.
Custard:
- Mix all ingredients together in a serving bowl and whisk over the water bath until the sauce has reached a temperature of 65 °. It should be creamy and creamy and when you blow on a spoon that has been dipped in and pulled out again, a pattern similar to a rose must emerge. (Peel off to the rose). If you dare, you can do it in a saucepan (without a water bath). But you have to stir everything really well beforehand and then slowly heat the pot with the cold mixture on the stove to 65 °, stirring constantly. A thermometer is helpful. Take off the heat, let cool down and get ready.
Apples:
- Wash the apples and cut out the core with a larger pipe and prick all around several times with a wooden stick. Fill the middle with the marzipan mixture and spread it a little on the upper edge. Provide.
Completion:
- Preheat the oven to 160 ° circulating air. Line the baking sheet with parchment paper.
- Halve the dough and roll out both halves on a floured surface into a round plate large enough to enclose the apple. The size depends on the size of the apples, so take your measurements every now and then.
- Place a filled apple in the middle of each. Carefully fold the dough up and press it down like a tied sack. Brush with egg white, place on the baking sheet and bake on the middle shelf for 35 minutes. The dough should have taken on a good color and be slightly crispy.

Tip:
- If the dough slips off the apple in some places during baking, you can carefully push it up a little with a flat knife and press it down. This does not affect the taste or the later appearance. The cooled sauce is also intentional. You eat the apple fresh from the oven (important for children, be careful, the inside is super hot), and the cooled sauce quickly brings everything to an enjoyable temperature.
