Ingredients
 

For the pureed apple cream:

  • 5 tsp Vitamin C powder
  • 250 g Apple
  • 40 g Butter
  • 25 g Sugar
  • 5 g Vanilla sugar
  • 100 ml Apple juice naturally cloudy
  • 200 ml Cream

Apple cocktail

  • 25 cl Calvados
  • 10 cl Havana Club
  • 10 cl Vanilla syrup
  • 15 cl Cinnamon syrup
  • 15 cl Apple juice
  • 15 cl Cream

Apple ice cream

  • 700 g Apples
  • 200 g Sugar
  • 4 tsp Vanilla sugar
  • 7 tbsp Lemon juice
  • 700 ml Milk
  • 120 ml Cream
  • 4 Pc. Egg yolk

For the set:

  • 100 g Dark couverture
  • 40 g Sugar
  • 70 g Sugar fine

Instructions
 

Apple plateau

  • Cut off an approx. 2 centimeter thick lid from the apple and hollow out the lower part so that the apple does not get any holes from which liquid could leak. Process the lid in the apple cream. Now put the hollowed out apple in the water in which vitamin C powder was previously dissolved. Cover the apples in the bowl with foil.

Apple-cream

  • Sweat the apple pieces in butter, add the sugar and vanilla sugar and, after gently caramelizing, deglaze with apple juice. Reduce everything by 1/3 and then puree and pass through a fine sieve. Now fold the cream into the mixture and put in a cool place.

Apple cocktail

  • Mix all ingredients and pour into a shaker. Just before serving, add ice cubes and shake one more in the shaker. Pour the cocktail into the hollowed out apple plateau and add a straw.

Apple ice cream

  • Cut the peeled apples into small pieces and cover with 25g sugar, vanilla sugar and lemon juice, and steam them in a saucepan. Then puree the apple compote and chill. Bring the milk, the cream, the egg yolk and the remaining sugar to the boil, strain through a fine sieve and mix with the puree. Put the mixture in a cool place again for an hour and then put it in the ice cream machine, which stirs the ice cream until it is creamy.

Serving the dessert

  • Pile up the apple plateaus with the help of a bamboo stick. Fix the apple plateau on the plate with the help of Persipan. Pour the apple cocktail into the lower plateau and first pour the apple cream and a small ball of apple ice cream into the upper plateau. You can also decorate the dessert with cotton candy, a sugar net or chocolate letters
