Apple (juice) cake

Ingredients for 4 servings:

  • 250 g flour
  • 125 g butter or margarine
  • ½ tsp baking powder
  • 80 g sugar
  • 1 egg(s)
  • 1 kg apples
  • ¾ liter apple juice
  • 2 packs of pudding powder, vanilla
  • 1 packet of vanilla sugar
  • 150 g sugar
  • 1 cup of cream
  • Cocoa powder

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Make a shortcrust pastry, place it in a springform pan, and pull up the sides. Chop 1 kg of apples very finely. Boil 3/4 l apple juice, 2 packets of vanilla pudding, 1 packet of vanilla sugar, and 150 g sugar, or prepare as if preparing a pudding. Mix with the apple pieces, pour onto the pastry, and bake at 180°C for 1 1/4 to 1 1/2 hours (longer if necessary). The cake needs to cool for 24 hours, then spread 1-2 cups of whipped cream on top and dust with cocoa. Tastes great, always a hit! Usually tastes even better after several days!
