Apple marzipan cake

Ingredients for 1 servings:

  • 500 g apples
  • some lemon juice
  • 100 g marzipan paste
  • 125 g butter, soft
  • 125 g sugar and 2 tbsp extra
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 4 drops of bitter almond flavor
  • 3 eggs
  • 150 g flour
  • 1 tsp baking powder
  • 1 pinch of cinnamon
  • possibly powdered sugar

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Peel, core, quarter, and thinly slice the apples. Toss in a bowl with a little lemon juice and let stand. Meanwhile, grease a 26cm springform pan. Coarsely grate the marzipan and mix with the butter, sugar, vanilla sugar, a pinch of salt, and the bitter almond oil until creamy. Beat in the eggs one at a time, then briefly stir in the flour and baking powder. Spread the batter evenly in the pan and smooth it out. Pat the apples dry with a paper towel and arrange them tightly on the batter. Mix the cinnamon with 2 tablespoons of sugar and sprinkle the mixture over the apples. Cinnamon fans can increase the amount of cinnamon. Bake in a preheated oven at 175°C (fan oven) for 35-45 minutes. Let cool and sprinkle with powdered sugar. I serve the cake with whipped cream.
