Ingredients for 12 servings:
- 250 g flour (550, wheat flour)
- 1 tsp, leveled baking powder
- 75 g sugar
- 3 eggs
- 225 g butter
- 75 g ground almonds
- ½ tsp, smothered cinnamon
- 1 pinch of vanilla pod(s), pulp
- ½ kg apples
- 200 g marzipan paste
- 75 g powdered sugar
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Mix 150g plain flour, 1/2 level teaspoon baking powder with the sugar, 1 egg yolk, 75g ground almonds, and 100g cold, finely diced butter. Quickly knead into a dough. Roll out 3/5 of the dough to line the bottom of a greased 26cm springform pan, then use the remaining dough to form a 2cm-high rim. Mix the finely chopped marzipan with 125g softened butter. Stir in the vanilla bean paste, cinnamon, 75g powdered sugar, 2 eggs, and 1 egg white. Stir 100g flour mixed with 1 level teaspoon baking powder, a tablespoon at a time, into the mixture. Fold in the peeled and sliced apples and pour the mixture into the springform pan, smoothing it down, and bake on the middle rack at 160°C (convection oven) for approx. 45-55 minutes.
