Mozzarella – tomato – steaks with pasta

Ingredients for 2 servings:

  • 2 steak(s) (minute steaks) of pork
  • 3 tomatoes
  • 10 basil leaves
  • 1 mozzarella
  • 2 tsp breadcrumbs
  • 3 tomatoes, dried, in oil
  • 200 g pasta (penne, rigatoni)
  • pepper
  • Salt
  • oil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Pour boiling water over the tomatoes, peel and deseed them, and puree them with the basil leaves and sun-dried tomatoes. Season with salt and pepper. Add enough breadcrumbs to make the mixture firmer and easier to spread. Cut the mozzarella into four equal slices. Preheat the oven to approximately 200°C. Bring the water to a boil for the pasta. Heat a little oil in an ovenproof pan and fry the steaks on both sides. Add the pasta to the boiling water and cook for 8-10 minutes. Remove the pan from the heat and let it cool slightly. Spread two-thirds of the tomato mixture over the top of the steaks, top each with two slices of mozzarella, and place the pan in the oven to bake for approximately 5-10 minutes. Then remove the steaks from the pan. Return the pan to the heat. Deglaze the pan with a little water and add the rest of the tomato mixture. Mix everything well and then add the cooked pasta and melt for a minute.
