Apple Michel

The perfect apple michel recipe with a picture and simple step-by-step instructions.

For the vanilla sauce

  • 3 piece Eggs
  • 6 tablespoon Sugar
  • 2 piece Apple boskop
  • 200 g Bun old
  • 50 g Chopped walnuts
  • 1 Knife point Cinnamon
  • Lemon flavor
  • 3 tablespoon Whole grain breadcrumbs
  • 3 tablespoon Butter flakes
  • 1 piece Vanilla pod
  • 500 ml Milk
  • 200 g Cream
  • 1 tablespoon Sugar
  • 1 teaspoon Food starch
  • 5 piece Egg yolk
  1. Preheat the oven to 200 degrees (convection 180 degrees). Chop up the rolls, pour milk over them and leave to soak for 10 minutes. Separate the eggs and beat the yolks with sugar until the sugar has dissolved.
  2. Peel the apples, cut into eighths without the core and cut into thin slices. Add the pulp from the vanilla pod, walnuts, lemon flavor and cinnamon to the apples and stir. Gently squeeze out the rolls and mix with the egg yolk and apple mixture.
  3. Add 3 tablespoons of sugar to the egg white and beat until stiff. Carefully fold into the bread and apples mixture. Pour into a greased casserole dish, top with breadcrumbs and butter flakes. Bake in the preheated oven for 20 minutes.

Vanilla sauce

  1. Bring the milk, cream and vanilla pod to a boil in a saucepan. Add sugar. Mix the egg yolks and cornstarch and add to the boiling milk and cream mixture. Let it boil once.
