Ingredients for 6 servings:

  • 100 g butter
  • 70 g sugar (raw cane sugar)
  • 1 egg(s)
  • 75 g hazelnuts
  • 75 g flour (spelt flour)
  • 100 g apples (1 apple)
  • 50 g raisins
  • 1 tsp vanilla sugar
  • 1 tsp baking powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Separate the egg. Beat the egg whites. Cream the butter until fluffy. Add the sugar, vanilla, and egg yolk to the butter. Grate the apple and add it to the batter. Mix the hazelnuts, flour, and baking powder and fold into the batter. Finally, stir in the raisins and the egg whites. Pour into a muffin tin. Bake at 190°C (top/bottom heat) for about 30 minutes. Makes 6 delicious muffins. You can also use chocolate chips instead of raisins!
