Ingredients for 1 servings:
- 200 g margarine or butter
- 200 g sugar
- 1 tsp, heaped vanilla sugar
- 4 eggs
- 200 g flour
- 1 tsp baking powder
- 1 handful of walnuts
- 1 tonka bean(s)
- 4 drops of rum flavoring or 1 tsp rum
- 2 tsp brown sugar
- 1 tsp cinnamon powder
- 2 apples, cut into pieces
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour
for a springform pan of approx. 26 cm, the tonka bean makes this cake special, makes approx. 12 pieces
Cream the margarine or butter with the sugar and vanilla sugar until fluffy; the margarine will become noticeably lighter, almost white. In the meantime, dice or chunk the apples and chop the walnuts. Add the eggs, one at a time, to the butter or margarine-sugar mixture until well blended. Next, mix the flour with the baking powder and sift it into the batter. Grate the tonka bean and mix it into the batter with the rum flavoring or rum, then pour into a greased 26 cm springform pan. Sprinkle the chopped walnuts, apples, cinnamon powder, and brown sugar on top. Bake the cake for about 40 minutes in a preheated oven at 170°C. Be sure to do the skewer test, as every oven is different! If the cake isn’t done yet but the apples are already starting to brown, simply cover it with aluminum foil and continue baking. Let it cool on a wire rack.
