Apple muffins with sugar crust

Ingredients for 1 servings:

  • 250 g flour, type 405
  • 120 g butter, room temperature
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 eggs
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • some lemon zest, grated
  • 2 apples (Braeburn or Boskoop)
  • some lemon juice
  • 50 ml milk
  • some sugar, brown

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

for 14 moist and fluffy muffins

Preheat oven to 180 degrees Celsius. Beat butter, sugar, vanilla sugar, salt, grated lemon zest, and eggs over medium heat until fluffy. Combine flour with baking powder and baking soda and gradually stir in. Finally, stir in about 50 ml of milk, or less if necessary, to create a nice, even batter. Cut, core, peel, and slice the apples into small pieces. Drizzle with lemon juice and stir into the batter. Grease a muffin tin or line it with paper baking cups and divide the batter between the cups. Sprinkle with brown sugar. Bake in the oven for about 30 minutes. Remove from the oven and let rest in the tin for about 10 minutes. Place a baking sheet or a sufficiently large plate on top for the sugar crust and turn the muffins out onto it. Then turn upside down and let cool. Tip: If you like, you can add raisins to the batter or cinnamon, or mix cinnamon into the sugar for the crust.
