Apple pancakes

Ingredients for 4 servings:

  • 120 g flour
  • 80 g oat flakes
  • 4 eggs
  • 400 ml milk
  • 1 pinch of salt
  • ¼ lemon(s), the peel
  • 4 small apples
  • Clarified butter
  • 1 scoop of ice cream, of your choice
  • whipped cream
  • powdered sugar
  • some cinnamon

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

with ice cream scoop

Whisk together the flour, oats, eggs, milk, salt, and lemon zest and let rest for about 10 minutes. Peel the apples and cut them into small pieces. Heat the clarified butter in a non-stick pan. Add a scoop of batter, bake briefly, and top with a few apple slices. Sprinkle with cinnamon, turn over, and bake the other side until golden brown. Remove the pancake and fold it over. Place a scoop of ice cream on top of each pancake, sprinkle with powdered sugar, and serve with a dollop of whipped cream.
