Buttermilk biscuits

Ingredients for 1 servings:

  • 240 g flour
  • 1 tbsp salt
  • 1 tbsp baking powder
  • 2 tsp baking soda
  • 225 g butter or palm oil
  • 450 ml buttermilk

Buttermilk biscuits, makes about 9 biscuits

Preheat the oven to 190 degrees Celsius (375 degrees Fahrenheit). Cut the butter or palm oil into 1 cm pieces. Important: The fat must be cold. Sift together the flour, salt, baking powder, and baking soda. Using your hands or a food processor, mix the fat into the flour until it crumbles. Make a well in the center of the mixture and add 300 ml of the buttermilk. Working from the outside in, mix the flour and butter mixture with the buttermilk to form a sticky dough. Add more buttermilk if needed. Place the dough on a well-floured surface. Fold it over several times to create multiple layers (similar to puff pastry). Then press the dough with your hands to a thickness of about 4 cm and use a floured glass to cut out circles about 8 cm in diameter. Place the biscuits on an ungreased baking sheet and brush with buttermilk. Bake for 20-25 minutes, until the biscuits have risen and are a beautiful golden brown. Here in the Southern states, biscuits are served with almost every “normal” lunch instead of bread or rolls.
