Apple – pear – plum muffins for babies

Ingredients for 1 servings:

  • 1 apple
  • 1 pear(s)
  • 2 plums
  • 1 large egg(s)
  • 100 g spelt flour
  • 50 g potato flour or cornstarch
  • ½ pack of baking powder
  • 1 pinch of salt
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

No sugar, no milk, with spelt flour. Makes 12 pieces

Beat the egg with the salt until frothy. Finely grate the apple, pear, and plum and add to the mixture. Mix the flour, potato flour, and baking powder and add to the egg and fruit mixture. Grease a muffin tin or line it with paper baking cups. Divide the batter between the cups. Bake in a preheated oven at 170°C (convection oven) for approximately 50-60 minutes (test with a toothpick). Tip: To grease the baking tin, I melt 2 tablespoons of margarine in the microwave and then stir in 1-2 teaspoons of cornstarch. I then spread the liquid mixture into the baking tin. This ensures that every cake pops out of the tin perfectly.
