Ingredients for 1 servings:
- n. B. Apples, preferably Boskop
- 3 eggs
- 150 g sugar
- 1 tsp vanilla powder
- 150 g butter
- 250 g flour
- 2 tsp baking powder
- 125 ml milk
- Sugar
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes
Prepare a springform pan and line the bottom with baking paper. Preheat oven to 180°C (350°F). Peel and core the apples, and cut them into fairly small pieces. Place some of the pieces in the pan. Crack the eggs into a bowl, then add the vanilla powder and sugar, and beat everything together on high speed for a long time until light and fluffy. (I sometimes add a splash of hot water.) Melt the butter. Mix the flour and baking powder well and measure the milk. Now add some of the flour mixture to the egg mixture and gently stir in, then carefully add the butter, then more flour, and then the milk. Everything should end up forming a creamy batter. Pour the batter into the pan and spread the rest of the apples on top. Place the cake in the oven and bake for about 1 hour. Finally, sprinkle a little sugar on top so it can caramelize in the oven, or simply use a blowtorch if the sugar isn’t ready. Let the cake cool. I’ve made the cake with just apples and just plums. But both are also possible. Other combinations would be apple and red currant or jostaberry, for example.
