Ingredients for 8 servings:
- 300 ml milk
- 300 ml cream
- 5 large egg yolks
- 120 g sugar, brown
- 1 tsp vanilla flavor
- 2 large apples, sour
- 25 g butter
- 50 g brown sugar, to taste
- 1 dashes lemon juice, to taste
- 75 g flour
- 50 g butter, chilled, diced
- 50 g sugar, brown
- 1 pinch of salt

Vanilla ice cream with apples and crumbles, absolutely delicious! For the ice cream maker
Heat the milk and cream until just before boiling. Meanwhile, whisk the egg yolks and sugar until the mixture becomes light and creamy. Stir the milk and cream mixture into the egg yolk mixture, return it to the saucepan, and stir over low heat until the mixture is thick enough to thinly coat the back of a wooden spoon. Stir in the vanilla essence and let it cool. Chill in the refrigerator overnight so it freezes faster in the ice cream maker. The next day, core, peel, and dice the apples. Melt the butter in a large, heavy saucepan, add the sugar, and let it caramelize until light brown. Add the diced apples and sauté for 5-7 minutes, until the apples are tender but not falling apart. Taste for sweetness. They should still be slightly tart; add sugar or lemon juice if necessary. Let cool. Preheat oven to 190°C. For the crumble, combine flour and salt in a bowl, add chilled butter, and knead until crumbly. Add sugar and rub between your fingers until the dough clumps together. Spread the crumble on a baking sheet and bake in the oven for 10 minutes, or until golden brown. Let cool. Freeze the ice cream mixture in an ice cream maker. When it’s almost solid, briefly stir in the apples and crumble. Serve immediately while the crumble is still crisp.
