Ingredients for 1 servings:

  • 125 g butter
  • 180 g sugar
  • 1 tbsp vanilla sugar
  • 2 m.-sized eggs
  • 180 g flour
  • 50 g cornstarch
  • ½ pack of baking powder
  • 2 tbsp cinnamon
  • 200 g cream cheese, natural
  • ½ bottle of rum flavoring
  • 1 large apple
  • n. B. almond flakes
  • n. B. Sugar for sprinkling
  • some fat for the mold
  • some flour for the mold
  • 2 tbsp lemon juice for the apple slices

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

First, peel and thinly slice the apple, then drizzle with lemon juice to prevent it from browning. Beat the butter, sugar, and vanilla sugar until fluffy. Gradually add one egg at a time, then the other, and beat vigorously. Mix the flour with the cornstarch, baking powder, and cinnamon, and gradually add to the mixture. Add the cream cheese and rum flavoring, beat vigorously again, and pour into a greased and floured 26cm or 28cm springform pan. Press the apple slices into the batter and scatter the flaked almonds wherever the bare batter is still visible. Bake the cake at 180°C on the middle rack for about 45-60 minutes, depending on your oven. About 20 minutes before the cake is ready, sprinkle some sugar on top so it can melt or caramelize slightly. Check the doneness towards the end with a wooden skewer.
