Apple pie with almond crust

Ingredients for 1 servings:

  • 150 g flour
  • 1 tsp baking powder
  • 3 eggs
  • 100 g sugar
  • 1 kg apples, sour (e.g. Boskoop)
  • Cinnamon
  • 80 g butter
  • 80 g sugar
  • 100 g almond(s), sliced

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Mix flour, baking powder, eggs, and sugar to make a sponge cake batter. Line a 26 cm springform pan with baking paper and add the batter. Peel, quarter, core, and slice the apples. Arrange the apple pieces on the batter and sprinkle with cinnamon. Melt the butter, stir in the sugar and almonds, and spread the mixture over the apples. Bake the cake in a preheated oven at 180°C (top/bottom heat), or 160°C (convection oven). If the almond crust gets too dark, cover the cake with aluminum foil, but remove it 5 minutes before the end of the baking time to allow the crust to crisp up.
