Ingredients for 4 servings:

  • 3 bell peppers, halved, red, green, yellow
  • 3 zucchini, halved
  • 1 large eggplant(s), sliced
  • 12 mushrooms
  • 1 bunch of spring onions
  • clove(s) garlic, halved
  • Balsamic vinegar
  • Oil (olive oil)
  • pepper

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Place the prepared vegetables in a glass dish, drizzle with olive oil, and bake at 180-200°C for about 20 minutes. Enjoy while still warm, with balsamic vinegar and pepper to taste! Delicious as a starter with ciabatta or as a side dish to grilled meat or fish!
